Mom's night out!

The other night I was lucky enough to get to get together with a few of my mommy friends and their babies. For the occasion I wanted to bring something new and delicious. I thought "Spinach Artichoke Dip" sounded awesome for an appetizer, I also wanted a desert and have heard great things about this "Fluffy Dip" stuff so I decided that my mommy friends were going to be my guinea pigs and try both these recipes for me. Needless to say they were both a hit! I later made both again that same week for a belated Mother's Day gift for my Mom- and again everyone LOVED them! So here's the recipes:

Spinach Artichoke Dip (Mock Applebee's Recipe)
-frozen spinach thawed and drained
-caned artichoke hearts chopped
-pkg cream cheese
-1 cup grated mozzarella
-1 1/2 cup grated Parmesan
-2-4 cloves of garlic minced
-10oz. Premade Alfredo Sauce

Set oven to broil and spray dish with cooking spray.
Saute the garlic in a little olive oil. Add spinach and artichokes to pan. Add cream cheese and Alfredo. Finish up with 1 cup of mozzarella and 1 cup Parmesan. Put mixture into cooking dish and top with remaining 1/2 cup of Parmesan.
Broil just long enough to brown the cheese on top.
Serve with bread and tortilla chips.

Original recipe said to mix everything and put it in oven for 30min and 350- however I wanted the garlic sauteed so I precooked everything and ended up speeding up my cooking time, plus I think the flavor was well enhanced.


Fluffy Dip
-pkg cream cheese
-jar marshmallow cream

Blend both together (can stir by hand but it is easier with the hand mixer). Serve with assorted fruits, angelfood cake, pound cake or shortcake.
